Ingredients
For the pudding
9 slices ready-made madeira cake, plus extra, crumbled, for the topping
300ml/˝ pint double cream, whipped
small handful unsalted pistachios, chopped
handful strawberries, chopped
For the raspberry sauce
˝ punnet raspberries
2 tbsp icing sugar
For the chocolate sauce
100g/3˝oz cocoa powder
4 tbsp golden syrup
3 tbsp hot water
Method
1. Line a large bowl with cling film, then line the bowl with the cake slices.
2. Place the whipped cream, pistachios and strawberries into a bowl and mix well.
3. Spoon the cream mixture into the cake-lined bowl. Sprinkle the cake crumbs over the top of the mixture.
4. Transfer the bowl to the freezer to set for ten minutes.
5. For the raspberry sauce, press the raspberries through a sieve into a bowl and add the icing sugar.
