Brilliant Bank Holiday barbecue treat

As a summer of typical British weather draws to a close many people will be hoping that the August Bank Holiday weekend will at last provide an opportunity to get the barbecue out.

For anyone planning a great British barbecue this Bank Holiday what could be better than some great British food? Why not try these delicious Lamb and Feta Burgers, made with succulent, full flavoured Welsh Lamb?

We might complain when our British weather means cancelled barbecues and wet weekends but it’s the plentiful rainfall and green pastures of Wales that provide the perfect conditions for producing great quality lamb. Welsh Lamb is at the height of its season at moment, so it should be widely available in supermarkets and butchers, plus this recipe uses Welsh Lamb mince, a great value choice in these stormy economic times. And if the Bank Holiday Weekend is a wash out after all, these burgers are just as tasty when cooked under the grill!

Welsh Lamb and Feta Burgers

Makes: 6 medium sized burgers
Cooking time: Approx 12 minutes

Ingredients
450g (1lb) Welsh Lamb mince
30ml (2 tbsp) fresh mint, chopped
Black pepper
75g (3oz) feta, crumbled

To serve
Guacamole
Ciabbata rolls
Seasonal salad
Olives

Method
In a bowl mix together Welsh Lamb mince, fresh mint, black pepper and feta, combine well together Shape into 6 medium sized burgers and cook on a barbecue or under a preheated grill for approximately 12 minutes or until cooked through. Serve in toasted ciabatta rolls with a dollop of guacamole, large seasonal salad and a side dish of olives.
